Getting Healthy from the Inside Out
- I know I’ve posted a recipe for pizza in the past, but I wanted to provide another option to show you don’t have to give up favorite foods but you can still be healthy! You just have to get creative!!!

INGREDIENTS:

Whole wheat panini
-
Garlic Bulb
-
Red Onion, sliced

Roma Tomato, sliced
-
Goat Cheese
-
Cilantro, minced
-

- DIRECTIONS:

Roast the garlic bulb by cutting the pointy tip off, place on tin foil, drizzle with olive oil, and bake at 350′ until a knife and be easily inserted into the cloves. Allow to cool slightly and remove the cloves.

While the rarlic is roasting, caramelize the onions in 1 tsp oil on medium heat until they are slightly translucent and aromatic, about 5 minutes.

Smear the roasted garlic into the panini (think of it as replacing the sauce) top with caramelized onions, tomato, and goat cheese.

Bake in oven until crust is golden- do not judge it by the cheese as goat cheese does not “melt” like traditional cheeses.

Top with cilantro and enjoy!

As a variation, add sliced cooked chicken!
