Chocolate Tofu Cake

Whoever says they don’t like tofu has never tried this cake! Moist and delicious this has definitely become a favourite!

  • 1/4 cup unsweetened apple sauce
  • 1 tsp canola oil
  • 3/4 cup sugar
  • 1 pkg firm tofu (Silken Lite firm tofu, 349g pkg)
  • 1 tsp vanilla extract
  • 1/3 cup cocoa or carob powder
  • 1 1/3 cups cake flour
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 2 tbsp chopped walnuts (optional)

Preheat oven to 350′

Cut a piece of wax paper to fit in the bottom of your bake dish (approx 8×8 square or circle) With paper removed, spray the bottom and sides with a non-stick cooking spray. Place wax paper on the bottom of the dish and spray the paper.

In a food processor, add all the wet ingredients and blend until mixed thoroughly, scraping the sides as needed.

Add all the dry ingredients and pulse the processor until the dry ingredients are mixed well. Pour into the prepared dish and sprinkle with chopped walnuts if desired. Bake for approx 25 minutes- until the cake pulls away from the sides. Let cool for 15 minutes before turning out.

Makes 12 Brownies

GLUTEN FREE MODIFICATION

Substitute the flour with “Bob’s RED MILL Gluten Free All-purpose Baking Flour”… it takes the guess out of which flour to use and gives the cake a nice consistency and taste! Also add 1/2 teaspoon of Xanthan Gum.

Bake in mini muffin tins for little “Brownie Bites”
