Healthy Energy Balls

Tired of bars bought in the stores with huge amounts of calories, fat and preservatives with ingredients you can’t pronounce? Try these easy energy balls. Looks like Tim Hortons Timbits, but you’ll only need one or two!

  • 10-12 pitted dates
  • 1 cup pecans
  • 1 heaping tsp or cocoa or carob powder
  • coconut

*NOTE* Dates must be soaked for an hour for easier processing

**NOTE** If you have problems digesting nuts, soak them over night for easier digestion.

In food processor, pulse pecans until fine grained. Add the cocoa or carob powder.

Shake off excess water and add 6 dates. Blend until smooth before adding the rest.

Add enough coconut so the texture is dry, but can still be formed into balls. Form into desired size balls and roll in extra coconut. Store in fridge for easy grab-and-go snacks!

This recipe is SO simple- try making it your own by playing with different nuts, seeds, dried fruits, protein powder or peanut butter!
