It’s no secret that beans are good for you. Low in fat and high in fiber, they are an excellent addition to any diet! Try this twist on an old bean favorite: chili! For those who don’t like beef, use ground turkey or chicken breast for a low-fat change. Recipe easily adaptable to your taste; here’s the base- get creative!
- 1 package ground turkey breast
- 1/2 onion chopped
- 1- 19 oz can black beans
- 1- 19 oz can mixed beans
- 1- 7 oz can corn niblets
- 1- 19 oz can diced tomatoes
- 1/2 cup cooked brown rice
- 1 package low sodium taco seasoning
Brown turkey meat, adding chopped onion part way through so onion is softened. Add rest of ingredients and let simmer 30-45 minutes.
Serve immediately with couple tablespoons of low-fat sour cream or low-fat grated cheese, if desired.
Also an easy meal to package for lunch the next day!
