Getting Healthy from the Inside Out

Asian Lettuce Cups

I always enjoyed ordering this appetizer when going out for Asian food, but after deciding to try making it myself, I don’t think I’ll order it again! Easy and inexpensive to make, this is a fabulously fun way to get children to eat their vegetables!

  • 370g Ground Turkey
  • 1 small/medium Diced Onion
  • 1/2 cup Finely Diced carrots
  • 1/2 cup Finely Diced Celery
  • 1/2 cup Finely Diced Mushrooms
  • 1/3 c Hoisin Sauce
  • 1/4 cup Water

Cook ground turkey until juices run clear. Add the diced onion and ccok a couple minutes. Add carrots and cook an additional couple minutes. Add celery and mushrooms, mix and let cook 2-3 minutes. Add sauce and mix well, stirring until thoroughly coated. Add water as needed.

Serve with lettuce of choice.

To eat, spoon some of the turkey mixture into a cup of the lettuce and enjoy! Think of lettuce tacos! Be prepared to lick off your fingers!
