Getting Healthy from the Inside Out

Breakfast cookies

The other week, I was thinking about what I have for breakfast: egg whites, oatmeal, a little milk, a dash of oil, spices, and sweetener… and I realized that I was 1/2 way to a cookie! I sat down, thought about it, looked at other recipes to see what I was missing, and figured out how to make this common “snack food” into a meal!  

These cookies are nutritionally dense and perfect when you don’t have time and are on the run! Make ahead of time and store them in the fridge or freezer to grab and go on your way out the door! Easily adapted to your taste; try different dried fruits or nuts, cut fat almost in half by removing the nuts entirely, or add a small handful of chocolate chips for a little treat!

 

  • 2 cups Oats
  • 1 tub of Motts “Fruitsations” unsweetened apple sauce (or approx 1/4 cup)
  • 1/2 Cup Egg Whites
  • 2 tbsp Honey or Pure Maple Syrup
  • Spices (cinnamon, nutmeg, and/or ground cloves) if desired
  • 1 tbsp Oil
  • 1/2 tsp Vanilla
  • 1 tsp Baking Soda
  • 1/3 cup Raisins
  • 1/4 cup Pecan pieces

Combine all wet ingredients and mix well. Stir in oats, spices, and baking soda. Stir until well mixed. Add raisins and pecans.

Spoon generous amounts onto parchment paper covered baking sheet. Flatten slightly.

Bake in preheated (350′) oven for approx 20 minutes, until bottoms are nicely browned and cookies are firm to the touch. Allow to cool.

Makes 6-8 cookies
