A delightfully thick soup bursting with flavor! Easy to make with ingredients often found on hand! This recipe was provided to me by a client and has been adjusted very slightly- so do the same for your taste! Adding raisins sounds odd, but it provides a wonderful flavor of spicy and sweet. After my first batch of soup, I think adding a diced apple would be lovely!
- 3 Sweet Potato, peeled and diced
- 1 lb Carrots, peeled and diced
- 4 Cups low sodium Broth
- 2 Tbsp Walnut Oil
- 1 Onion
- 1/2 Tbsp Cumin Seeds
- 1 Tbsp Curry Powder
- 1 Tbsp Ground Ginger (or 1/2 Tbsp fresh grated)
- 1 Cup Raisins
- 200 ml Lite Coconut Milk
In large sauce pan, add broth, sweet potatoes, and carrots. Bring to low rolling boil and cook until vegetables are tender when pierced with a fork.
In skillet, heat oil and sauté onions until translucent and tender; add to sauce pan with spices.
With hand held blender, puree the vegetables until smooth. Add raisins and coconut milk, stir to mix thoroughly and serve hot.
