Mini Egg White Bites

Make ahead of time and take with you. Eat cold or reheat!

  • 1 slice bread
  • 3/4 cup egg whites
  • spinach, cut up
  • 1/4 yellow pepper, small diced
  • seasonings
  • cherry tomatos, halved

With rolling pin, flatten the slice of bread and break into pieces to fit into the bottom of non-stick sprayed mini muffin tin- I managed 9 pieces. In a bowl, mix together egg whites, vegetables (except tomato) and spices. Spoon into prepared tins. Top with halved tomato.

Cook until cooked throughout. Eat immediately, store for later consumption. Serve with salsa, if desired. If eating later, eat cold or reheat- and try adding a piece of goat cheese! Delicious!
