Lasagna Cupcakes

A friend of mine posted a similar recipe on FB, but I couldn’t open it, so I don’t know if this is even close- but, really, how hard can it be? Once I had the idea, I just ran with it- and I’m excited about the possibilities!!!

  • Wonton Wrappers
  • Low Fat Cheese

Spaghetti Sauce:

  • Extra Lean Ground Beef or Turkey
  • Onion
  • Mushrooms
  • Bell Pepper
  • Spices
  • Can Crushed Tomato

Make the spaghetti sauce as you normally would using the ingredients and spices you choose.

To assemble:

Take 2 wonton wrappers and place them so they make an 8-pointed star. Push evenly down into a regular sized muffin tin sprayed with non-stick spray. Spoon in some of the spaghetti sauce, top with a slice of cheese- I used singles and cut them into 1/4’s, using 1/2 for the middle layer. Repeat the steps so there’s 2 layers.

Continue for all the muffin cups and bake in pre-heated oven just until the tips of the wonton wrappers start to brown. Serve warm or store for later consumption!
