Getting Healthy from the Inside Out

Tastes like you spent hours on it, but simple to make! Easy versatility- use pork chops or even steak! Serve with brown rice, quinoa, or cous cous. Green beans, asparagus, or a mixture of grilled vegetables make excellent sides!

Makes 2 Servings

  • 2 Boneless, Skinless Chicken Breast Halves
  • 1 – 2 Tbsp Oil
  • 1/4 Tsp Dried Oregano
  • 1/4 Tsp Dried Thyme
  • 1/4 Tsp Cumin Seed
  • Pinch Salt
  • 10 Turns Fresh Ground Pepper
  • 1 Medium Onion, thinly sliced
  • 2 Garlic Cloves, minced
  • 1/3 Cup Raspberry Wine Vinegar
  • 2/3 Cup Chicken Broth

 

In a small bowl, mix together the oregano, thyme, cumin seed, salt, and pepper. Mix well. Sprinkle and rub onto both sides of the chicken. Let the chicken sit for 10-15 minutes to allow flavors to absorb into the chicken.

 

Heat oil in pan over medium heat; once hot, add the chicken and allow to cook 4-6 minutes each side until cooked through and juices run clear. Transfer to warm location (warmed oven or toaster oven) while making reduction. In same pan, add onion and garlic, stirring constantly for 30 seconds. Add vinegar and cook for an additional 2-3 minutes. Reduce heat, add broth, and allow to simmer until liquid is reduced by half.

 

Serve Chicken with choice of side dishes, top chicken with onion vinegar reduction, and enjoy!
