Getting Healthy from the Inside Out

Light and tasty curry soup

Since, for the most part, I eat the same foods day in and day out, it’s always nice to come up with something new! I tried this the other day and had been counting down the days until I could make it again!

Makes a LARGE pot of soup, so even though I’ve broken out the macros for 4 servings, it provided about 14-15 cups of soup! So add it as a side and make it go twice as long!


1 Tbsp coconut oil
6 cloves garlic, roughly cut
1 White onion, diced
1 Sweet potato, diced (about 2 cups)
1 Head cauliflower, broken into floweret (about 4 cups)
1 zucchini, cubed
1 Tbsp curry powder
1 tsp turmeric
1/2 tsp chili powder
1/2 tsp ground cumin

Heat coconut oil in large pot. Add garlic and sautéed for 2 minutes. Add onion and sautéed for an additional 2 minutes.

Add sweet potato, cauliflower and about 8 cups of water and bring to a boil. Add zucchini and boil until all vegetables soft.

Using hand held blender, blend thoroughly until soup is very creamy. Add spices and blend so it’s mixed well.

Serve with diced chicken, minced fresh cilantro and 2 Tbsp 0% Greek yogurt.
