Getting Healthy from the Inside Out

Soup is about the easiest thing to make and it’s super healthy and filling! Plus any nutrients that leach out during the cooking process aren’t lost as you’re using the water!

Easy to modify to taste, these are the ingredients I used:

1 onion
1 stalk celery
1/2 large bell pepper
1 small zucchini
1 sweet potato
1 jalapeño
1 can diced tomatoes
1 small head cauliflower
1 large crown broccoli
Curry powder
Chili powder
Ground cumin

Cut all veggies to bite sized pieces and put in large pot. Empty can of diced tomatoes, juice and all, and add enough water to have veggies just out of the water.

Add spices to personal taste.

Let boil until veggies are cooked. Using hand blender, blend veggies well until smooth.

Add diced cooked chicken if desired.

This recipe makes 6 servings.
