Getting Healthy from the Inside Out

BBQ Chicken Pizza

Just because it’s pizza doesn’t mean it’s unhealthy- it’s about what you put on it! This is a GREAT basic recipe that is better than anything from Pizza Hut! Add mushrooms, fresh cilantro, garlic, or diced tomatoes!

  • Boneless, skinless chicken breast, diced 
  • yellow or red onion, diced
  • BBQ sauce of choice
  • low fat feta cheese
  • low fat mozza cheese (or soya cheese)
  • whole wheat pizza shell

Preheat oven to 350′

Add a bit of oil to a non-stick pan and saute until the onion until they’re translucent and soft. Set aside.

(Add anything else that needs to be cooked- garlic, mushrooms, etc- if you’re modifying the recipe and cook a few minutes)

Saute chicken and cook through. Once no juice runs from the chicken, add the BBQ sauce and coat everything. Pour onto the pizza shell and spread to mixture on the shell.

Sprinkle desired amount of feta and mozzarella cheese on the BBQ chicken mixture. Put in oven and bake until shell is desired crispiness- put on lower rack for a crispier shell bottom.

Cut into 1/8’s and enjoy! (try not to eat it all yourself!)

*NOTE*

This recipe is open to a lot of personal interpretation. Use 1 or 2 chicken breasts, 1/2 or a whole onion, BBQ sauce brands and flavours (and quantity) and cheese to taste. Feta is more tart, so try different ratios of cheese. KEEP IN MIND that a healthy pizza can be made very unhealthy very quickly! Heaping the cheese on not only smothers the flavours, but makes it unhealthy- low fat or not! Go easy on the cheese!

 

REVISED:

I tried this version the other day- takes a bit more time, but WELL worth the extra effort!

  • Boneless, skinless chicken breast
  • yellow onion
  • 2 bulbs of garlic
  • fresh Rosemary
  • low fat feta cheese
  • low fat mozza cheese (or blend)
  • whole grain pizza shell 

Grill chicken before hand (so a great use of leftover chicken from the grill!!!) and slice fairly thin.

Slice off the pointy end of the garlic bulbs to expose the cloves, drizzle olive oil over bulb and bake garlic bulbs so cloves are soft when removed. Smear the cloves onto the pizza shell. Spinkle with fresh Rosemary.

Arrange slices of chicken breast onto the shell. Lightly sprinkle with feta and other cheese. Bake at 350′ until underside of crust is nicely browned.
